Classic Thai / Lao Hot Sauce

This Classic Thai / Lao Hot sauce tastes best when it is dipped with Thai Lao sticky rice or barbecue meat. You can also pour the Classic Thai / Lao Hot Sauce over khao chow which is jasmine rice. For a gourmet version of this sauce, check out the roasted tomato chili sauce and the eggplant chili sauce.

Dipping Sauce: Classic Thai / Lao Hot Sauce
1 garlic clove
1 Red Chili
1 Green Chili
1 tablespoon Squeezed Lime
1 tablespoon Fish Sauce

Using the Thai / Lao Mortar & Pestle Set, crush the garlic and chilies until they are in small pieces. Add squeezed lime and fish sauce and mix. Pour the classic Thai / Lao Hot Sauce into a small dipping bowl for serving.

I will make my own "simple and honest" version soon--made from roasted tomatoes.

I could live on sticky rice and the hot dipping sauce(with meat to dip with)every meal.It is simply my favorite food in the world.

i know of no alternative to the fish sauce,but simply put,i could live on sticky rice and this hot sauce every meal.The best way to eat it is to cut up thin slices of steak or chicken,attach it to the sticky rice and dip in the hot sauce.There is no better meal in the world.Believe me when i say it.Cut up slices of cucumber to cool your mouth off.I usually drink ice water,and a side of good cold beer.Nothing on this earth equals this combination.

In reply to E, a replacement for fish sauce for Vegetarians is to try adding some light soy sauce.

I believe (but have never tried) there is something called Vegetarian Fish Sauce.
